Make your onions work to keep you healthy.  Try the following recipe when you are getting a cold, need some relief from a chest infection (after visiting the doctor and making sure it isn’t bronchitis!), and as a first step anti-infective.

Onion and Honey Syrup


1 large (or 2 small) onions

450g clear honey

1 jar


Peel and slice the onion.

Put 3 to 5cm (1 to 2 inches) onion in bottom of jar.

Cover with 3 to 5cm (1 to 2 inches) sugar/honey.

Fill jar with alternating layers, pressing each layer down firmly before adding more. Cover last layer of onion with a thick layer of sugar or honey.

Leave overnight.

Strain off liquid, bottle and label the jar.

Store in cool, dark place. Keeps for about two weeks.


Red onions are milder and may be more tolerable for children or queazy adults.

If you are adventuresome, add Ginger to the syrup to help loosen phlegm and stimulate the immune system.
